A shop given over to sharpening knives, though it also sells a selection of knives chosen by its sharpeners, for home and professional use. It specialises in Edo hand sharpening, done entirely by hand without machines, and takes Japanese-style and Western-style knives alike. The usual turnaround is three business days, but Japanese- and Western-style blades can be done the same day, which sometimes fits inside a travel schedule. Worn handles can be replaced too. Open 10:00–18:00, closed Wednesdays.
